Today's tuning method:

The standard tuning method in use today came about sometime during the Baroque period (1600-early 1700's). At that time, the 5-course (5 pairs of strings) guitar was commonly used among musicians. Therefore, the tuning method involved 5 pitches, ADGBE (one pitch was assigned to each pair of strings). Later, during the mid-1700's, there was a gradual move toward adding a lower string to the 5-course guitar. The new string was named (low) E. This resulted in a standard tuning of EADGBE to the 6 string guitar, the same method used today. 1
